Joe Babich favours 'a fuller, riper, softer style of Sauvignon Blanc'. It's not a jump out of the glass style, but the wines develop well. The latest releases reflect a rising input of grapes from the company's Cowslip Valley vineyard in the Waihopai Valley, which gives less herbaceous fruit characters that it's other Marlborough vineyards. Bay and Barnes leaned on our cousins across the ditch for the grapes to make this classic Australian Chardonnay. Following harvest, fruit was gently pressed before settling. Specially selected yeasts were used to start fermentation. From there the wine was delicately matured on oak and lees stirred to impart lovely toasty flavours and a creamy texture.

Dolcetto is an Italian grape variety that is little known or planted in Australia. The variety hails from the mountainous Piedmont region of north-west Italy. Translated literally, 'Dolcetto' means 'little sweet one'. This wine has fresh, lifted aromas of red jubes, blackberries, red currants, hints of spice and liquorice. The palate has flavours of ripe summer berries and a natural grape sweetness that is balanced by the frizzante mouth-feel providing a refreshing, lively finish.
