Make the most of passionfruit season with this delightful gin fizz.  

You will need: 

• Pulp of 1 passionfruit
• 5 fresh raspberries 
• 1 1/2 parts gin
• 1/2 part raspberry syrup or cordial
• 1/2 part lemon juice
• 1/2 part egg white 
• Soda & ice

To make:

1. Muddle the raspberries in the bottom of a cocktail shaker
2. Add gin, syrup or cordial, lemon juice, egg white and passionfruit pulp and dry shake (without ice)
3. Add ice and shake vigourously 
4. Pour over more ice and top with soda
5. Garnish with passionfruit / raspberries 
6. Enjoy!
